Quick and easy—a recurring theme in my food lately, as most of my time and attention is focused on Margot these days: making sure she’s not pulling up on anything dangerous or making sure she’s not putting anything dangerous in her mouth…really easy going, chill days, as you can see (NOT!). Because only so much time can go to snacks and meals, I look for recipes that don’t require too many ingredients or steps. This yogurt bark checks off on both.
These turned out to be really delish and refreshing treats. The crunch of the pistachios and the tangy sweetness of the cranberries are the perfect combo for the mild, just sweet enough bark. Feel free to have fun and experiment with different toppings and flavors!
1 1/2 cup of plain organic yogurt
2 tbsp honey
1/4 cup semi-crushed pistachios
1/4 cup dried cranberries
Line a 9×13 inch baking pan with parchment paper.
Combine yogurt and honey. Pour yogurt mixture into parchment lined pan and spread evenly.
Sprinkle pistachios and cranberries onto the yogurt.
Freeze until completely frozen (mine took about 3 hours). Remove from pan and break into pieces. Enjoy!
