For today’s Trader Joe’s Tuesday post, I want to share with you another yummy recipe I got from the sample section at my local TJ’s. This one was quite good and can be a great side dish for the holidays. We just had it for lunch along with a side salad. Definitely filling. I wanna say this entire recipe serves about 3 hungry adults. If it’s more of an appetizer, it can serve 5-6 people.
- Trader Joe’s Country Potatoes with Haricots Verts and Wild Mushrooms
- Trader Joe’s Garlic Herb Chicken Sausage
- Trader Joe’s Organic Diced and Fire Roasted Tomatoes
Heat up saute pan on stove top. (We used a teaspoon of coconut oil on the pan). Once it’s hot, put entire bag of frozen potatoes in the pan. While this is cooking up, cook the chicken sausage in a separate pan. I made the mistake of cutting them up first and then cooking them, my husband reminded my that you gotta cook them whole so that the juices/flavors stay in.. in which case I made him finish cooking the rest of the dish since he’s such a know-it-all 😉 – then once the sausages are done, cut them up and add them to the potatoes. Pour the can on diced and fire roasted tomatoes in to the saute pan and mix up. Add salt and pepper to taste. We also threw a dollup of sour cream on top once it was finished.. super good!
