This was a perfect side dish we had the other night..and then in to the following morning, and throughout the day we were snacking on it. Super tasty! Just make sure you take it out of the oven in time if you don’t want the corn on the top to be too hard. My husband wasn’t a fan of those tough pieces, but I kinda liked ’em.
- 1 can Trader Joe’s Fire Roasted Green Chiles
- 1 box Trader Joe’s Cornbread Mix (*They make this option in gluten free but I wasn’t ready…)
Follow directions on the box. You’ll need an egg, milk, and some oil (we used EVOO – Trader Joe’s brand). Mix it all together and then add the chiles. Put in oven-safe baking dish at 350 and enjoyyyy!
