First Trader Joe’s Tuesday post of the New Year! I’ll do my best to stick with this every Tuesday. I think I go in there too often that the samples are starting to be the same and so I have to get a little more inventive or brave enough to ask more random employees to help me put some things together. THIS dish in particular can be vegetarian completely, or you can add some
flavor meat to it. 😉 Pretty yummy and somewhat* nutritious. I love the eggplant and zucchini mix .. bought an extra bag just to sauté on it’s own.
- 1 pack Trader Joe’s Garlic Chicken Sausage
- 1 bag Trader Joe’s Shredded Quattro Formaggio
- 1 bag Trader Joe’s Marinated Eggplant & Zucchini
- 1 jar Trader Joe’s Roasted Garlic Sauce
- 1 can Trader Joe’s Organic No Salt Diced Tomatoes
- 1 pack organic zucchini
Preheat oven to 325F. Mix Roasted Garlic Sauce with Organic Diced Tomatoes in a separate bowl. Chop 1-2 zucchini and chop up 2-4 chicken sausage pieces (optional, leave out if you want to keep it all vegetarian) Layer an 8×8 baking dish with the eggplant/zucchini, fresh cut zucchini, and chicken sausage. Pour half the sauce mix over it, then add half the bag of cheese. Add another layer of everything, top with the rest of the cheese, and bake for 325F for 30 minutes. Enjoy!
